Muffin Stuffin

Ingredients:


Sufficient Quantity Spray Release

Paper Muffin cup

5 Oz. Wt.(Per muffin) any Vie de France muffin batter

1 Oz. Cream Cheese Filling

Directions:


Pre heat convection oven to 350° F.

Spray muffin pans with spray release.

Insert one paper muffin cup into each muffin cup in the pan.

Using a scale, measure 5 Oz, of the appropriate batter into each paper-baking cup. Repeat this process with the appropriate muffin batter until the par is met.

Place the muffin pan with the batter into the pre-heated oven, and then turn the oven off and bake for 10 minutes.

After 10 minutes, turn the thermostat to 325° F and bake the muffins for 10 more minutes.

Carefully remove pan from the oven.

Inject 1 Oz. of cream cheese filling into the top center of the muffin. Return the muffin to oven and bake 15 to 18 minutes longer.

Once baked, tap the muffin pan on the floor or table to jolt the muffins loose. Leave to cool for 5 minutes, and then turn the muffins on their sides in the muffin pan to cool the rest of the way. This will help keep the bottom of the muffin from "sweating" and getting soggy.

Garnish as follows: Sprinkle lightly with powdered sugar.
