Open Faced Mini Breakfast Sandwiches

Ingredients:


7 Vie de France Mini Ciabatta Tenera Rolls #7533

8 oz. cream cheese, softened 

4 eggs 

1/2 C sour cream 

4 oz. salsa 

8 oz. bacon, crumbled 

2 oz. mushrooms, sliced 

4 oz. shredded cheddar cheese

Directions:


Slice rolls in half, then place them cut side up on baking sheet and set aside. 

Using an electric mixer, beat cream cheese on medium speed until no lumps remain. 

Add eggs, one at a time, to cream cheese. Add sour cream

Spoon egg mixture over rolls, then top with salsa, bacon and mushrooms. 

Cover and bake at 325° F for 20-25 minutes or until eggs are set.

Remove from oven and top with cheese.

Yield: 14 servings
